| Summary and
Impressions
of the Macrobiotic Community:
Boulder
is a macrobiotic dream. There
are more health food stores than supermarkets, and there are so many old
time macro people that there is no need for a formal community structure. All the experienced professional services and product resources
necessary for a macrobiotic practice are readily available. The School of Natural Cookery is operated by Joanne
Saltzman, a
woman totally dedicated to the macrobiotic way of life. She has taught about 1,000 people since beginning in 1983.
The macrobiotic community seems to be focused on Boulder while
neighboring Denver does not have a macrobiotic reputation. Jerome
Canty lived in Aspen and lectured in Boulder; he was the first macrobiotic
teacher in the area. Sanford
Greenberg and his wife taught and counseled in Boulder since the early
1980's. They opened two
schools, an apprentice program and residential program.
These activities stopped in 1989.

The School of Natural Cookery offers a 4
days per week hands on professional track course held for 8 hours a day,
and a home cook track held twice a year for one day.
There are residential facilities available at the school.
Aside from the school, there used to be a study house in Boulder,
but there no longer is one.
