MACROBIOTICS IN THE UNITED STATES: An Assessment of Services and Activities

Summary and Impressions of the Macrobiotic Community: Boulder is a macrobiotic dream.  There are more health food stores than supermarkets, and there are so many old time macro people that there is no need for a formal community structure.  All the experienced professional services and product resources necessary for a macrobiotic practice are readily available.  The School of Natural Cookery is operated by Joanne Saltzman, a woman totally dedicated to the macrobiotic way of life.  She has taught about 1,000 people since beginning in 1983.  The macrobiotic community seems to be focused on Boulder while neighboring Denver does not have a macrobiotic reputation. Jerome Canty lived in Aspen and lectured in Boulder; he was the first macrobiotic teacher in the area.  Sanford Greenberg and his wife taught and counseled in Boulder since the early 1980's.  They opened two schools, an apprentice program and residential program.  These activities stopped in 1989.  In the early 1980's, Boulder rivaled Boston in size of macrobiotic community.

Newsletter: Nexus--an alternative medicine magazine; Joanne Saltzman advertises in Westward, a mainstream local newspaper.  
Support Groups: Naomi Waxman, Carolyn Dino and Paul Weinrauch only.  
Visiting Counselors and Cooking Teachers: Lino Stanchich used to come; Adelbert Nellissen from Holland also came to Boulder to counsel.  Rebecca Wood now visits.

Work Study Programs: The School of Natural Cookery offers a 4 days per week hands on professional track course held for 8 hours a day, and a home cook track held twice a year for one day.  There are residential facilities available at the school.  Aside from the school, there used to be a study house in Boulder, but there no longer is one. 
Other Counselor Interests: Sanford Greenberg is an exotic car dealer, and has a large Cell Tech multi-level marketing business.  
Promotional Activities: Health food store notices; yellow pages listing "Macrobiotics Headquarters of Colorado".  Joanne Saltzman will begin national and local ads in a national health magazine.

Cottage Industries: Celestial Seasonings, White Wave Tofu; students of Joanne Saltzman are planning vegan protein dishes.  
Macrobiotic Restaurants: Sunflower Restaurant and Masala's Creekside Café are macrobiotic; Janet Bush cooked at Wild Oats deli; Joanne Saltzman may open a café.  Also, there are another 22 restaurants, including Wild Oats, that advertise vegan options.  
Natural Food Chain Stores: Wild Oats, Vitamin Cottage, Whole Foods.
Independent Natural Food Stores: Healthway-Arvada, Golden Natural Foods, Nature's Garden, Great Mother Market, Alpine Natural Foods, Bamboo Market, Healthy Solutions, Alfalfa's.

Macrobiotic Community Assessment: Abundant Services:  Cooking school; 2 counselors & 3 cooking teachers. Moderate Activities:  No pot lucks or dinners; 2 macro restaurants; so many macro people that community not needed.  Macro center started in 1982; cooking school since 1983.  
Area Description: Denver is the capital of Colorado, and the distribution, manufacturing and transportation center for the Rocky Mountain region.  It is also a central point for snow sports and serves as a gateway to nearby mountain vacation spots.  It is called the Mile High City because it stands about one mile above sea level.  Its metropolitan area population is 1,623,000.
