Summary and Impressions of the Community

Boulder is a macrobiotic dream.  There are more health food stores than supermarkets, and there are so many old time macro people that there is no need for a formal community structure.  All the experienced professional services and product resources necessary for a macrobiotic practice are readily available.  The School of Natural Cookery is operated by Joanne Saltzman, a woman totally dedicated to the macrobiotic way of life.  She has taught about 1,000 people since beginning in 1983.  The macrobiotic community seems to be focused on Boulder while neighboring Denver does not have a macrobiotic reputation. Jerome Canty lived in Aspen and lectured in Boulder; he was the first macrobiotic teacher in the area.  Sanford Greenberg and his wife taught and counseled in Boulder since the early 1980's.  They opened two schools, an apprentice program and residential program.  These activities stopped in 1989.  In the early 1980's, Boulder rivaled Boston in size of macrobiotic community.

Macrobiotic Community Assessment

Abundant Services:  Cooking school; 2 counselors & 3 cooking teachers. Moderate Activities:  No pot lucks or dinners; 2 macro restaurants; so many macro people that community not needed.  Macro center started in 1982; cooking school since 1983.
