Area Description

Charleston is an important Atlantic Coast port, and the second largest city in the state.  Many houses and other buildings date from the 1700's and 1800's. The Civil War began on Charleston's waterfront in 1861.  Its economy depends heavily on tourism.  The metropolitan area population is 506,900.

Summary and Impressions of the Community

Sherryann St Cyr used to prepare simple macrobiotic meals in the area but she is no longer living in Charleston.  The history of other macrobiotic activity in the past is not available. Charleston residents have depended on the Columbia macrobiotic community 110 miles away for its source of activity until Roxanne Koteles moved there less than a year ago. Roxanne brings to Charleston not only her rich cooking knowledge and experience, but a dynamic personality, a good hearted nature, and boundless energy.  Since arriving in Charleston, she has persuaded about one hundred residents to start a macrobiotic diet, and has begun to spread her wings in Savannah and Atlanta as well.  We believe that Roxanne's strong leadership and integrity will continue to change the macrobiotic scene in Charleston significantl

2-year program at the New England Culinary Institute in Montpelier, VT. 2-internships during the course; 700 working hours at Palm Beach's Breakers Hotel and another 700 hours at the San Francisco Ritz Carlton.  Worked at the Ritz Carlton for 18-months.  Studied Levels I, II, and III at the Kushi Institute.
